The Natural Process, also known as dry processing, is one of the oldest methods of processing coffee. In this method, coffee cherries are laid out to dry under the sun with the fruit still intact around the bean. This process can take several weeks, during which the cherries are regularly turned to ensure even drying. Once the cherries are fully dried, the beans are hulled to remove the outer fruit layers.

In this method, the coffee cherries are depulped, removing the outer fruit layer, and the beans are then fermented in water to break down the mucilage that surrounds them. After fermentation, the beans are thoroughly washed to remove any remaining fruit residues before being dried.
